Baked Pumpkin Fettuccine Alfredo | How Sweet It Is

?Tis the season to stuff squash into every food imaginable.

Get on board, k?

There are a million things I look forward to every autumn, such as crunchy leaves and crisp air and new seasons of fabulous TV shows and the thought that omgthankgod! that shorts are out of season, but the best by far is smashing squashes(eseses) into savory foods.

And I wish the excitement was shared with other members of my family, but while my husband is just ?okay? with a squash side dish, the rest of my family practically lost their? stuff? when I brought butternut lasagna to Thanksgiving dinner last year. Um, hello? I?m not gonna fight it if you can?t handle squash in untraditional ways. More for me. Whomp whomp.

And that?s sort of what I did last weekend. I, of course, was able to call this a meal considering it consisted of some of my favorite ingredients in the world, but SOMEONE else had to pair it with some leftover turkey meatballs. Not together. I would NOT let him ruin this fettuccine like that. But I mean, who knows what happened when my back was turned. He probably doused it with ketchup or something.

Welcome to my life.

The thing is? I could not stop devouring this. Like straight up, right from the baking dish devouring it. Like a hot mess. Like a I-don?t-even-care-who-sees-me hangry disaster. Like a it?s-9:45-and-I?m-watching-Full-House-and-frying-extra-sage-for-a-microwave-heated-bowl-of-pumpkin-pasta freak. I even kept sneaking bites (from whom? I don?t know. Is it whom or who?) for the rest of the night, as the dish got colder and colder and colder. Didn?t care. Was a girl possessed.

And I swear, it?s different from the butternut shells I rambled on and on about last week, because, uh? well? I say so. It?s much creamier, it sports a different noodle, it?s covered in sage and cheesier too. Cheesier in a good way. Not a cheesy way. And while it?s still a bit decadent, it?s slightly lighter than traditional alfredo and loaded with fiber and nutrients and all sorts of good stuff.

That?s my story and I?m sticking to it.

Baked Pumpkin Fettuccine Alfredo

Yield: serves 4-6

Prep Time: 25 minutes

Cook Time: 20 minutes

Total Time: 45 minutes

Ingredients:

1 pound whole wheat/whole grain fettuccine
2 tablespoons unsalted butter
2 tablespoons flour
2 garlic cloves, minced
4 cups low-fat milk
2 tablespoons mascarpone cheese
1 cup freshly grated parmesan cheese
3/4 cups pumpkin puree
1 tablespoons freshly chopped sage leaves
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon pumpkin pie spice
freshly grated fontina cheese for topping
fine breadcrumbs for sprinkling

fried sage
10-15 fresh sage leaves
2-3 tablespoons olive oil

Directions:

Preheat oven to 350 degrees F. Boil water and prepare pasta according to directions, shaving 1-2 minutes off of cooking time. I cooked my fettuccine for 6 minutes.

Heat a large saucepan over medium heat and add butter. Once sizzling, whisk in flour and stir to create a roux, until bubbly and golden, about 4-5 minutes. Add garlic and cook for 30 seconds. Add in milk, stirring constantly and increasing heat a little bit until it begins to bubble and thicken, about 5-6 minutes. Add in mascarpone, parmesan, pumpkin, sage, salt, pepper and pumpkin pie spice, mixing well until smooth and combined and thickened into a sauce.

Spray a baking dish (mine was 7x11) with nonstick spray and add pasta to the dish. Pour sauce over top and toss well with kitchen tongs to coat. Add some grated fontina on top and a sprinkling of bread crumbs. Bake for 15-20 minutes, until bubbly and slightly golden.

While pasta is baking, heat a small saucepan over medium heat and add olive oil. Once hot, add sage leaves 4-5 at a time and fry for about 30 seconds. Remove and place on a paper towel.

Serve pasta immediately and top with sage leaves.

[This can easily be reheated but like any alfredo, you will need to add a bit of milk or liquid as it warms to bring the creaminess back to the dish.]

You can find me elbow deep in that dish up there.

StamfordPlus.com News - Madison launches home energy promotion

Madison, CT - Madison has kicked off a one-year promotion to help its residents reduce their energy consumption, save money on their utility bills, and support the Town of Madison?s Energy Assistance Program?the Neighbor to Neighbor Fund?through participation in the Home Energy Solutions (HES) program.

Home Energy Solutions is a convenient home energy improvement service that is designed to help people save money on their monthly energy bills. For a $75 co-pay, licensed technicians install an average of $700 of energy efficiency products and weatherization services in a home or apartment and saves homeowners and renters an average of $200 each year following implementation.

The Town of Madison and the Madison Town Energy & Efficiency Committee have partnered with licensed Home Energy Solutions vendors, New England Conservation Services and Energy Resource Group Technologies. Each vendor will make a $75 donation to the town?s energy assistance program for each home that signs up for a HES service within the first 60 days of the promotion; $50 in the following 60 days; and $25 thereafter through October 2013. The Town of Madison?s Energy Assistance Program?the Neighbor to Neighbor Fund?provides residents with energy assistance to heat their homes.

?The Home Energy Solutions program promotion is a great way for our residents to not only save money on their energy bill and help the environment, but also help out fellow residents in need,? said Madison First Selectman Fillmore McPherson said.

In addition to participating in the town wide HES promotion, Madison is one of the leading communities to take advantage of energy-saving programs for municipal and school buildings. These initiatives have helped to save money on utility expenses and make the community more sustainable. It is a partnership between the Energy Efficiency Fund, the Clean Energy Finance and Investment Authority (CEFIA) and local electric and gas utilities.

Through participation in energy-saving programs, such as Home Energy Solutions, residents can help Madison earn points toward rewards. For every 100 points earned through participation in Energy Efficiency Fund programs, Madison will receive a ?Bright Idea Grant? of $10,000 that can be used toward a community-selected energy-saving project, such as hiring an energy auditor to assess/benchmark municipal buildings or to leverage existing funds to make energy-saving improvements to a school.

In the coming week, town residents will receive a letter and brochure on the HES promotion in the mail. For additional information on the promotion or to sign up for a HES service, please call 877-389-3221.

CLS Bank v Alice - Federal Circuit Orders en banc Rehearing ...

Those who have been following comments on the split decision in CLS Bank v. Alice Corp. case will be unsurprised to learn that yesterday the Federal Circuit ordered a rehearing en banc in the matter, vacating the panel decision originally decided on July 9, 2012.

The questions to be addressed on appeal are:

1. What test should the court adopt to determine whether a computer-implemented invention is a patent ineligible ?abstract idea?; and when, if ever, does the presence of a computer in a claim lend patent eligibility to an otherwise patent-ineligible idea?

2. In assessing patent eligibility under 35 U.S.C. ? 101 of a computer-implemented invention, should it matter whether the invention is claimed as a method, system, or storage medium; and should such claims at times be considered equivalent for ? 101 purposes?

The parties have been invited to file new briefs on these questions, and the case will be heard based on the original briefs and any new briefs filed.

The conflicting majority and minority views are set out in an earlier ?house divided? post

http://www.ipwatchdog.com/2012/07/15/cls-bank-v-alice-corporation-reveals-a-house-divided/id=26433/

It is arguable that neither view is beyond criticism and that any emergent legal test as to patent-eligibility demands further development. There is much to commend the majority view that each of???101, 102, 103 and 112 serves a different purpose and presents different questions and that under??101 only when it is apparent that the claimed subject-matter is a manifestly ineligible abstract idea should that subject-matter be excluded. Significant involvement of a computer in the working of the invention points towards invention.

But a clear answer to Judge Prost?s view on the facts that this particular invention is not patent-eligible is not discernible from the majority opinion. ?More questionable is her criticism that the majority should have followed ?the Supreme Court?s unanimous directive to apply the patentable subject matter test with more vigor?. Authority binding on the lower courts is not an approach involving vigor or its lack, but rather the rule of law which can be derived from the earlier case and can be applied and developed to meet the new factual situation of subsequent cases.

Against this background, as commentators have pointed out, the decision in?Prometheus v Mayo?arguably fails to set out a rule that is fit for further development and which excludes mere patent-ineligible discoveries of rules of nature whilst allowing pharmaceutical inventions that have been considered patent-eligible for decades. Whatever the outcome, the decision in?CLS?will have effects beyond the software field and will deserve close scrutiny.

The views of the USPTO as amicus curiae is invited and other amicus briefs will be entertained and may be filed without prior consent. Widespread comment from interested parties can be expected in this interesting and significant case. Stay tuned.

Rustic Fall Baby Shower Dessert Table

This fall inspired dessert table for a baby shower was styled by Miranda from Whimsical Printables. Miranda created the burlap and lace bunting for a focal point above the table. She also hung tea-lit filled mason jars with twine from the trees.?Sweet treats on the desert table included cake pops, chocolate covered Oreos, sugar cookies and brigadeiros. Her client did not want a big cake so Miranda chose a bundt cake which worked with the autumnal feel of the party. Placement cards from her collection were used to label the food.??This table could easily be used for Thanksgiving. Great job!? Scroll down for the vendor credits.

Analysis: Chavez win means more of the same for Venezuela oil

CARACAS (Reuters) - President Hugo Chavez's re-election on Sunday means Venezuela's state oil company PDVSA will remain highly politicized and will continue its discount supply deals with his socialist allies.

Chavez, 58, won a new six-year term with more than 54 percent of the vote against opposition rival Henrique Capriles, a young state governor who sought to end his 14-year, self-styled revolution.

Critics say Chavez has hobbled PDVSA with the weight of his government's financial demands - it helps pays for everything from sports teams to health clinics and home building - meaning it has neglected to invest enough in the oil business.

The industry brings in more than 95 percent of the OPEC nation's hard currency revenue. PDVSA produces almost 3 million barrels per day (bpd) and boasts the biggest crude reserves in the world.

But the company, which has more than 100,000 employees, has repeatedly failed to hit its own production targets and has suffered a string of sometimes-deadly accidents in recent years.

Following Chavez's comfortable victory, his government will seek to push forward a raft of ambitious joint ventures with foreign partners in the huge Orinoco extra-heavy crude belt - one of the planet's biggest, mostly untouched oil reserves.

Venezuela's crude production fell in 2010 to its lowest level since a months-long strike at PDVSA a decade ago, and Orinoco is key to the government's hopes of increasing output by as much as 2 million bpd or more over the next few years.

In total, the Chavez administration - which has repeatedly raised taxes on the oil industry while requiring that PDVSA have a majority stake in all projects - expects investment of more than $80 billion in the Orinoco belt over the next several years.

It has signed deals for projects there with foreign companies including Chevron of the United States, Spain's Repsol, Italy's Eni and a consortium of Russian companies, including Rosneft.

Executives from foreign companies in some of those joint ventures say they have suffered delays because of late payments by PDVSA, lack of infrastructure and uncertainty over tax rules.

Those delays are likely to continue, but the Russian joint venture began pumping its first oil last month, and others are due to come onstream soon.

NEW FOCUS ON ASIA

Under Chavez, China has become a key source of funding, providing his administration with loans totaling $32 billion over the last few years. PDVSA is sending 430,000 bpd of crude and products to China in repayment.

The importance of Beijing to Caracas's finances is expected to increase under Chavez's next government. His administration often says it wants to boost exports to China to 1 million bpd.

The new Chavez government is also expected to prioritize efforts to tap its offshore natural gas. Venezuela is among the world's top 10 nations in gas reserves but has yet to begin any commercial gas production. Instead it imports supplies from neighboring Colombia.

Electricity shortages are a pressing domestic issue, and the development of Venezuela's natural gas reserves would help the government produce more power.

All eyes are on the Perla gas field and its reserves of more than 15 trillion cubic feet. Production is due to begin there early next year at a partnership between PDVSA, ENI and Repsol.

Chavez is also expected to continue and possibly widen the politically driven oil-supply deals with ideological allies such as Cuba, Belarus, Iran, Syria and more than a dozen Central and South American countries.

Under these agreements, Venezuela is often paid for its oil in goods or services - sometimes with food or livestock - which puts even more pressure on PDVSA's cash flow. The company was not paid directly for almost half the crude it pumped last year.

Ramirez is expected to remain in his post following Chavez's victory, at least in the short-term. He once described PDVSA as "red from top to bottom" in its support for the president.

While there is discontent within the company's ranks - some workers resented being bused to rallies during the election campaign, for instance - the creation of a single workers' union has limited criticism of PDVSA's management.

"It is an honor for us to take part in Chavez's government," Wills Rangel, president of the oil workers' federation, told Reuters last month.
